How to make Pani Puri at home

Pani Puri is one of the most popular and loved street foods in India. Known by different names like Golgappa and Puchka, this snack is famous for its crispy puris filled with spicy, tangy, and refreshing flavored water. While eating it from street vendors is fun, making Pani Puri at home is a great option if you want better hygiene and the freedom to customize flavors according to your taste. The process may look long, but if you follow it step by step, it becomes easy and enjoyable.

Step 1: Gather All Ingredients

Before starting, it is important to keep everything ready. This will make the cooking process smooth and organized. For making Pani Puri, you need ingredients for three main parts: puri (crispy shells), filling, and pani (flavored water).

For puris, you will need semolina (sooji), a little all-purpose flour (maida), baking soda, water, and oil for frying. For the filling, boiled potatoes, boiled chickpeas (or white peas), chopped onions, green chilies, and coriander leaves are required. For the pani, you will need fresh mint leaves, coriander leaves, green chilies, ginger, tamarind pulp, and spices like black salt, cumin powder, and chaat masala. You can also prepare sweet tamarind chutney if you like a mix of sweet and spicy flavors.

Step 2: Prepare the Dough for Puri

Start by making the dough. Take one cup of semolina and add two tablespoons of maida into a mixing bowl. Add a small pinch of baking soda. Now slowly add water and knead the mixture into a tight and firm dough. The dough should not be soft, otherwise the puris will not turn crispy.

Once the dough is ready, cover it with a cloth and let it rest for about 20 to 30 minutes. Resting helps the dough become smooth and easier to roll.

Step 3: Roll and Fry the Puris

After resting, take the dough and roll it into a thin sheet. Make sure it is not too thick, otherwise the puris will not puff properly. Use a small round cutter or even a bottle cap to cut small circles.

Heat oil in a deep pan on medium flame. Carefully drop the small puris into the hot oil. Press them lightly with a spoon so that they puff up. Fry them until they turn golden brown and crispy. Remove them and place on tissue paper to absorb excess oil. Let them cool completely before storing.

Step 4: Prepare the Filling

The filling is simple but very important for taste. Take 3 to 4 boiled potatoes and mash them in a bowl. Add boiled chickpeas or white peas for extra texture and protein. Now add finely chopped onions, green chilies, and fresh coriander leaves.

Season the mixture with salt, red chili powder, roasted cumin powder, and chaat masala. Mix everything properly so that all the flavors blend well. You can also add a little tamarind chutney to make the filling slightly sweet and tangy.

Step 5: Prepare the Pani (Spicy Water)

The pani is the most important part of Pani Puri as it gives the snack its unique taste. To make it, take a grinder and add fresh mint leaves, coriander leaves, green chilies, ginger, and tamarind pulp. Grind everything into a smooth paste.

Transfer this paste into a large bowl and add cold water according to your desired consistency. Now add spices like black salt, normal salt, roasted cumin powder, and chaat masala. Mix well and taste it. Adjust the spices as per your preference. If you like it tangier, add more tamarind or lemon juice. If you want a slight sweetness, add a little jaggery.

Refrigerate the pani for at least 30 minutes before serving, as it tastes best when chilled.

Step 6: Make Sweet Tamarind Chutney (Optional)

If you enjoy sweet and spicy flavors together, you can prepare a quick tamarind chutney. Take tamarind pulp and cook it with jaggery in a pan. Stir until it becomes thick. Add a pinch of salt and roasted cumin powder. Let it cool down before using.

This chutney enhances the taste of Pani Puri and gives it a balanced flavor.


Step 7: Assemble the Pani Puri

Now comes the most exciting part. Take one puri and gently make a small hole on the top using your thumb. Be careful not to break it completely. Add a spoonful of the prepared potato filling inside.

If you like, add a little sweet chutney. Then pour in the chilled pani or dip the puri into the pani. Serve immediately and eat it in one bite for the best experience.


Step 8: Serve Fresh and Enjoy

Pani Puri should always be served immediately after assembling. If left for too long, the puris will become soft and lose their crispiness. Arrange everything nicely on a plate and serve with extra pani on the side.

This snack is perfect for family gatherings, small parties, or even evening cravings. You can also let everyone assemble their own Pani Puri, which makes it more fun.
